Adversity knocks some operations out of business while others seem to grow because of it. Such is the case with Mercedes Munoz and her Mexican restaurant, El Imperial, on Main Street in Cabool.

In 1993 a fire destroyed the restaurant she had worked so hard since 1975 to develop. She had to close temporarily to rebuild the inside and part of the building’s structure. Instead of walking away she looked upon the fire as an opportunity. She then took the bold step to expand her El Imperial Restaurant into adjoining vacant space and designed and decorated it the way she dreamed it could be.

Her confident initiative and hard work have allowed Mercedes to reach her dream of having the best Mexican restaurant in our area. People come from all over to eat at Cabool’s and the area’s finest - the El Imperial Restaurant.
